grilled cheese with a twist

After grocery shopping today, I was excited to get home and whip up some lunch. Craving a grilled cheese, I wanted to make it in a less conventional way. Adding apples and bacon gives this childhood favorite some new flavors.
  • 2 slices of whole-grain bread (I have come to love Food for Life 100% Whole Grain Ezekial 4:9 Bread. So healthy, filling, and only 80 calories a slice. Yum.)
  • 1/2 tbsp butter
  • 1/2 tablespoon of Dijon mustard
  • 1/4 cup of reduced fat cheddar cheese
  • 2 slices of cooked bacon
  • 2 slices of a Granny Smith apple, thinly sliced
Heat butter in a nonstick pan over low heat. Smooth mustard over one slice. Add cheese, apples, and bacon. Top with other slice of bread. Add to pan and cook slowly, so the cheese melts completely and you get that pretty golden brown color. This yummy sandwich is just under 300 calories. Sounds good to me, especially with some pickles and popcorn chips.
