chilaquiles

I was craving Mexican food all day, so I headed to the grocery store for some ingredients. On the menu? Chilaquiles! I figured what better way to enjoy this yummy meal than with friends.

Here is what you need: corn tortillas, green salsa, shredded cheese, cream cheese, oil, chicken (optional), and whatever toppings you want. We chose guacamole and sour cream. Yum!

Cut the tortillas into triangles and toss into a pan of hot oil. When they're lightly browned transfer them to a paper plate covered with paper towels to soak up excess oil. Cook up the chicken on the stove and cut into bite size pieces.

Layer the tortillas, chicken, cheese, cream cheese, and green salsa in a lightly greased baking dish. Pop in the oven for thirty minutes at the temperature of 325 degrees. We didn't measure anything out. We just went on how much cheese, sauce, and chicken we wanted. The more the better! Add some rice and beans, and you have a tasty treat.
