dark chocolate date bars

I've been having a major sweet tooth lately, and I can't shake it. Instead of giving into sugar cookie and Snicker bar cravings, I decided to make date bars to satisfy it. They don't sound too appealing, do they? But trust me, drizzled with a little dark chocolate and these babies are yumtastic!

Ingredients:
1 1/2 cup almond flour
1 1/2 cup oats
1 tsp salt
1/4 cup coconut oil
2 cups pitted dates
1/2 cup water

Optional for added topping:
1/4 cup dark chocolate chips
1 tablespoon coconut oil

Preparation:
In food processor pulse together almond flour, oats, and coconut oil until crumbly. Press crust into greased 8x8 pan. Save 1/2 cup of crust crumbles for later.
In food processor blend the dates and water together until a paste forms.
Press date mixture onto crust firmly, and sprinkle remaining crust crumbles on top.
Drizzle with a little dark chocolate chips melted with coconut oil. This is optional!
Place in fridge to set, preferably overnight for a good firmness, but 2 hours will do.
Cut into squares.

  1. I have been making healthy snacks lately too. I recently tried a cookie recipe with no flour, eggs, sugar or butter (sounds gross but they had chickpeas in!)

    They turned out quite well and were much better for me than eating a regular cookie.
