quinoa, please

Pondering what to cook for dinner tonight, I scoured the fridge and pantry. Looking for something healthy, I noticed my box of quinoa was begging to be taken out of and cooked up. So I granted its wish with an easy, tasty recipe.

Ingredients:
1 tbsp of butter (or olive oil)
1 small yellow onion, finely chopped
3-4 cloves of garlic, finely chopped
2 cups of vegetable broth (or chicken broth)
1 cup of uncooked quinoa
Salt, to taste
1/4 cup of grated parmesan cheese

Directions:
  • In a medium sauce pan, sautee the onion and garlic in butter (or olive oil) over medium-high for 3-5 minutes, until onions are just soft and the garlic is golden brown. Reduce heat to medium low.
  • Add the vegetable broth and quinoa. Cover, and allow to simmer until liquid is mostly absorbed and quinoa is cooked. This takes about fifteen minutes.
  • Remove from heat. Gently stir quinoa. Season with salt to taste, and top with Parmesan cheese.
This recipe makes about three servings, at 318 calories per serving.

The meal filled me up, and it didn't take a huge portion to do so. I had one helping, plus some chicken to add a little protein to the mix. Now I have some healthy left-overs that I can pop in the microwave in the next coming days. I think I will add some steamed broccoli for next time.
